Kamut Oatmeal Cookies

Molino Soncini Cesare Semi-processed Kamut flour mix | 100g |
baking powder | ½ teaspoon |
baking soda | ½ teaspoon |
salt | ¼ teaspoon |
brown sugar | 175g |
melted butter | 115g |
egg | 1 |
vanilla | 1.5 teaspoons |
Ingredients for the filling/topping
75g chocolate chips, 75g walnuts, 150g finely ground rolled oats, 150g rolled oats
Recipe:
Pre-heat oven to 190°C. In a large bowl whisk the egg, melted butter (or oil), sugar, and vanilla. In a separate bowl blend together the kamut flour, ground oats, regular oats, baking powder, baking soda and salt. Add dry ingredients to the butter mix, stir well, and add the chocolate and walnut pieces. Drop heaped tablespoons of dough onto a greased baking sheet, flattening each slightly. Bake for 8-11 minutes. Allow to cool before serving.
