Homemade multi-grain loaf

Ingredients | |
water | 350ml |
Molino Soncini Cesare multi-grain DARK flour | 350g |
beer yeast | 15g |
malt | 1 tablespoon |
Molino Soncini Cesare type-1 flour | 150g |
salt | 10g |
mixed seeds | as desired |
Ingredients for the filling/topping
Recipe:
Melt the yeast in the water and malt. Slowly add the flour and work together constantly. Add the salt, and continue to work until you have a smooth dough. Leave to rise until it doubles in volume, form it into the shape you want and cover with the seeds. Leave to rise for another 30 minutes, and then bake in a pre-heated oven at 230°C for 15 minutes, and then 30 minutes at 180°C.
